History & Origin
Syrniki (сырники / сирники) get their name from 'syr' — the old Slavic word for what is now called tvorog or curd cheese. They have been a breakfast and dessert staple across Ukraine, Russia and Belarus for centuries.
Ingredients
Tvorog (fresh cottage cheese), egg, a little flour, sugar, vanilla and sometimes raisins.
Traditional Preparation
Cheese, egg, flour and sugar mixed just enough to bind. Shaped into small discs and pan-fried in butter until deep golden on both sides. Never over-mixed.
Regional Variations
With raisins, poppy seed, apple, cocoa, or plain. Fried in butter or baked.
Pairings
Sour cream, honey, jam (raspberry, apricot or blackcurrant), fresh berries.
