History & Origin
Blini (блины) are among the oldest Slavic dishes — pagan in origin, round and golden as the sun. They are the star of Maslenitsa, the pre-Lent butter festival, when families eat blini every day for a week.
Ingredients
Flour, milk, eggs, yeast, butter, sugar, salt.
Traditional Preparation
A yeasted batter, rested for an hour, then ladled onto a hot buttered pan and cooked thin on both sides.
Regional Variations
Savoury (with red caviar, smoked salmon, herring, sour cream) or sweet (with jam, honey, condensed milk).
