History & Origin
Çılbır is said to date back to the Ottoman palace kitchens, where poached eggs over yoghurt were recorded in 15th-century court documents. It fell out of fashion for a time before Turkish home cooks and, later, breakfast restaurants across the country brought it back as a modern classic.
Ingredients
Eggs, thick strained yoghurt (labne or süzme), garlic, butter, Turkish chilli flakes (pul biber or Aleppo pepper), a little vinegar for poaching, salt, fresh dill or mint.
Traditional Preparation
Garlic is stirred into thick yoghurt and left to mellow. Eggs are poached gently in barely simmering water with a splash of vinegar to help them hold their shape, then set on top of the yoghurt. Butter is browned with chilli flakes until it foams red, then poured over just before serving.
Regional Variations
Some versions swap butter for olive oil; others add sumac or crushed walnuts. A version with smoked pastırma is popular in Istanbul breakfast houses.

Warm bread for mopping the yoghurt and chilli butter, black tea, or a glass of fresh juice.

In a shallow bowl, yoghurt on the bottom, eggs nestled on top, chilli butter poured over while it still sizzles, herbs scattered last.
