Mercimek çorbası is one of the most common soups in Turkey, appearing on nearly every restaurant menu from simple lokantas to formal dining rooms. Lentils have been grown and eaten across Anatolia for millennia, and this smooth, golden soup remains a daily comfort dish rather than a special-occasion one.
Ingredients
Red lentils, onion, carrot, potato (in some versions), butter or olive oil, cumin, paprika, and a squeeze of lemon at the end.
Traditional Preparation
Lentils and vegetables are simmered together until fully soft, then blended smooth. A finishing swirl of butter melted with paprika is poured over the top just before serving, along with a wedge of lemon.
