History & Origin
Menemen comes from the Aegean town of the same name, near İzmir. It is one of Turkey's most beloved breakfast dishes and has spread across the country and, more recently, the world.
Ingredients
Eggs, tomato, green Turkish pepper (sivri biber), butter or olive oil, salt, black pepper. Sometimes sucuk (spiced sausage) or feta.
Traditional Preparation
Peppers softened in butter, then tomato added and cooked down. Eggs cracked into the pan and stirred gently until just set — never dry.
Regional Variations
With sucuk, with feta, with kaşar cheese, or plain. Some regions add onion; Aegean purists do not.
Pairings
Warm bread from the stone oven, olives, cheese, and a glass of black tea.
How It Is Served
In the pan it was cooked in, still glossy, with bread on the side.
