What is Chicken Şiş Kebab (Tavuk Şiş)?

History & Origin

Chicken arrived late to the Turkish grill. For most of Ottoman history the mangal belonged to lamb, and tavuk şiş became a fixture only in the twentieth century, as chicken became affordable and city kebab houses widened their menus. It is now the most ordered kebab in Turkey — the household choice rather than the feast one.

Ingredients

Boneless chicken thigh, thick yoghurt, olive oil, tomato and red pepper paste, garlic, oregano, black pepper, salt.

Traditional Preparation

Thigh is cut into cubes and left in yoghurt for a few hours — the lactic acid tenderises without turning the meat mealy the way lemon does. Grilled over medium coal so the marinade caramelises rather than burns, and pulled off while still juicy at the centre.

Regional Variations

Some kitchens use breast for a leaner skewer; purists insist on thigh. In the southeast the marinade carries more pepper paste; along the Aegean it leans on olive oil and oregano.

Rice or bulgur pilaf, grilled pepper and tomato, garlic yoghurt, ayran, pickled chilli.

Did You Know

Yoghurt does the work of both marinade and shield — it clings to the meat and protects it from the coal's direct heat, which is why tavuk şiş survives a hot grill better than a plain oiled skewer.
