Beef stroganoff (бефстроганов) is named after the Stroganov family — one of Imperial Russia's wealthiest merchant dynasties. The dish first appeared in Russian cookbooks in the 1860s and became internationally famous through Russian émigrés after 1917.

Ingredients

Beef tenderloin or sirloin, onion, mushrooms, sour cream, mustard, butter, flour, black pepper, salt.

Traditional Preparation

Beef sliced into thin strips, seared quickly in butter, set aside. Onion and mushroom softened in the same pan, then sour cream and mustard added. The beef returns for a minute — no longer, or it toughens.

Regional Variations

With or without mushrooms, over rice or buckwheat, with a splash of cognac in the sauce (a Soviet-era addition).

Pairings

Buckwheat kasha, mashed potato, or thin egg noodles.
